Located in the northern part of Montalcino, in southern Tuscany, the historic San Filippo winery, owned by Roberto Giannelli, covers 22 hectares of land and produces limited quantities of Brunello and Rosso di Montalcino, from the estate's 4 vineyards, near Cerbaiona. Here, the microclimate characterized aby excellent temperature variations between day and night are ideal for the perfect maturation of Sangiovese. The Sangiovese Grosso grapes are selected and harvested from vineyards located at an altitude between 240 and 300 meters, with north and north-east exposure and soils of Eocene origin with clay and limestone. Fermentation takes place in steel at a controlled temperature and the finished wine rests first in barrique for 24-28 months and then in the bottle for another 10 months. The wine reveals a brilliant and intense ruby color. Its aromatic profile is broad with notes of violets and red fruits, herbs and spices, tobacco, and balsamic hints. On the palate, it is concentrated and full, rich and soft with ripe tannins and a well-balanced acid vein. The finish is long and warm and recalls spicy hints. It is the ideal wine with game, in particular with wild boar stew, but it also goes well with mature cheeses.
