Founded in 1947 as a representative of the winemakers of the Greek island of Santorini, Santo Wines today is the largest wine producer on the island. The cooperative carries out a philosophy of safeguarding biodiversity and native varieties, producing wines with a Protected Designation of Origin (PDO) of the highest quality, with great respect for local traditions. This classic, luscious dessert wine is a majority Assyrtiko blend, with the addition of Aidani grapes, sourced from the vineyards of the island of Santorini. After the harvest, the grapes are left to dry naturally under the sun for about a week. Fermentation takes place in stainless steel tanks for approximately 40 days, and the finished wine is then aged in used oak barrels for six years. Santo Wines' Vinsanto has an intense and brilliant color with orange-red tones and some shades tending towards brown. Its aromatic profile is broad and complex with notes of raisins and dried apricots, honey, and sweet spices. On the palate, it is soft and smooth, rich and concentrated. It shows a great personality and a well-balanced acidic streak. The finish is pleasantly warm and persistent and recalls notes of honey. Perfect for dried fruit-based desserts and custard tarts.
