Polisy brut reserve (Champagne Andre Beaufort)

The André Beaufort winery was founded in 1969 and produces Champagne from organic grapes grown on six and a half hectares of vineyards that are distributed between Ambonnay and Polisy, in the Aube department. In addition to organic cultivation, the winery practices homeopathy and aromatherapy techniques to combat fungal diseases and minimize the use of copper and sulfur. The Champagne Brut Reserve Polisy żeby André Beaufort is produced with Pinot Noir and Chardonnay grapes from organically grown vineyards located in the Côte des Bars, on clayey soils. The grapes are harvested manually and fermentation takes place spontaneously and in separate plots. After the second fermentation (according to the Champenoise method) the wine rests on its lees for 24 months. The wine has a bright straw-yellow color. Its aromatic profile is elegant and broad with notes of yellow fruit, white flowers, wild herbs, and delicate hints of brioche bread crust. On the palate, it is an elegant and soft Champagne with a marked mineral vein and a lively character. It is fresh and creamy and has a long and persistent finish. It is the perfect wine for fish soups and fried fish but also works well with fresh cheeses.
