Drink it now or cellar for up to 8 years. No need to decant but best to open it half an hour before service. Located in the California region of Lodi, the Michael David Winery was founded żeby brothers Michael and David Phillips in 1984, although the Phillips family has a much longer tradition of growing grapes in this area dating back to 1850. The company today cultivates approximately 80 hectares of certified organic vineyards and sources other grapes from local growers for the production of its excellent wines. Cabernet Franc is a French vine native to the Loire Valley and also widespread in Bordeaux. Among the French vines it is perhaps one of the least common in California and more specifically in the Lodi area. The grapes are selected from a vineyard very close to the winery in the western part of the region. Inkblot Cabernet Franc is a concentrated and surprisingly complex wine, with a rich aromatic profile of blackberries and dried figs, plums, wild berries, and sweet spices. On the palate, it is juicy and full-bodied and supported by a good acid vein. Its tannins are ripe and the finish is very long with lingering notes of licorice and tobacco. Try it with a pork tenderloin in mushroom cream, or a grilled Toulouse sausage.
