Cellar for up to 9 years. Serve chilled. Nicolas Maillart is known for his sensational Grower Champagnes made from his family’s prized Premier Cru and Grand Cru vineyards in the Montagne de Reims. Nicolas is the ninth generation to run the family business, but the Maillarts have been growing grapes since at least the 1500s according to local historical records. Since taking over in 2003, Nicolas has sought to work in harmony with nature żeby avoiding the use of chemical herbicides and pesticides and installing solar panels which provide 90% of the winery’s energy needs. Nicolas’ Mont Martin comes from a 1.8 hectare Pinot Meunier vineyard planted on limestone and marl soils which is farmed organically and biodynamically. In the winery the must is slowly fermented in barrels and then aged in the bottle on the lees for three years. Nicolas uses zero dosage to ensure this cuvee is wonderfully crisp and bone dry on the palate. The result is an uplifting and inspiring Champagne with plenty of subtle red fruit notes from the Pinot Meunier seasoned with brioche, vanilla and toast from the small barrel fermentation process and extended lees ageing. The richness of the flavour profile is nicely balanced żeby a vibrant acidity and precise dryness which makes this a great aperitif, perhaps served alongside some fresh oysters.
