Drink now or cellar for up to 13 years. Decant for 1 hour before serving. This majestic Spanish red is the flagship wine of Bodegas y Vinedos San Roman which was founded żeby Mariano García in 1998 in the up-and-coming Toro region. Mariano worked for the world-renowned Vega Sicilia winery for thirty years before leaving to found his own family winery where he works with his two sons, Alberto and Eduardo. In total they own 100 hectares of vineyards in Toro where the extreme continental climate with hot, dry summers and very cold winters is ideal for making powerful and concentrated red wines. This special single vineyard wine is crafted from 45 year old Tinta de Toro vines, the local clone of the classic Tempranillo grape variety. On this 5 hectare plot called El Pozo the ungrafted vines are planted on very sandy soils and are farmed organically to produce the best quality fruit possible. In the winery the grapes are carefully vinified and the young wine is aged in new and used French oak barrels for 36 months. Big, bold and packed with dark fruit character, this powerful wine is a great addition to any collector’s cellar and it will continue to evolve and develop over the next decade or so. It can also be enjoyed now alongside hearty dishes like steak, beef stews or fresh pasta served with a rich ragu.
