Founded żeby Jorge Serôdio Borges together with his wife Sandra Tavares da Silva, the innovative Wine & Soul winery is located in the Douro Valley, Portugal's most prestigious wine region. The estate initially owned only one vineyard, located in the Pinhão Valley of Cima Corgo, but over the years, it has expanded, acquiring among others the Quinta da Manoella. This has allowed the company to expand its production and receive numerous positive reviews even at an international level. The winery prefers a natural approach in the vineyard and cellar, avoiding the use of chemical fertilizers and pesticides, and preferring the use of indigenous yeasts. The wine is a blend of the local Touriga Nacional, Touriga Franca, and Tinta Roriz grapes, with small additions of Tinta Francisca. The grapes come from the prestigious Quinta da Manoella vineyard, from terraced vines of around 40 years of age. After the harvest, the grapes are left to macerate for about 12 hours in granite lagares. Fermentation takes place in steel and the finished wine is then aged for 16 months in used barriques. Quinta da Manoella Douro Tinto has an intense red color with purple reflections. On the nose, it reveals aromas of cherry, plum, and raspberry followed żeby herbaceous and slightly spicy notes. On the palate, it is full and decisive with ripe tannins and a good acidity. Try it with lamb.
